Spanikopita
Spinach Pie
Ingredients ~
Filo Dough (you may have to ask where it is at the Market)
Bagged Baby Spinach
Feta Cheese
Extra Virgin Olive Oil
Fresh Garlic
Fresh Ground Pepper
Plastic Film or Cheese Cloth to cover Filo Dough while preparing ~ it dries out very quickly
Brush for Filo Dough
Thaw and read directions re: Filo Dough
Make garlic infused Olive Oil in Micro ~ Chop fresh garlic add to
Extra Virgin Olive Oil and zap about 30 seconds to start check
to see if oil smells like garlic ~ you don't want to burn the garlic
Brush Filo with Garlic infused Oil
Crumble Feta Cheese
Brush Baking / Roasting Pan w/oil
Layer Filo Dough
Crumbled Feta Cheese
Baby Spinach
Chopped Fresh Garlic From Infused Oil
Top with Fresh Ground Pepper
Repeat / Repeat
Cover with foil or glass top
Bake at 250° for 20 min. then check it ~
If it's not burning, let it go a few minutes more till slightly brown on top
Serve with Greek Salad on the side
